Diverging from the delicate richness of Pho or the boldness of Bun cha, Bun rieu boasts a tangy, nuanced broth with hints of fragrant crab, creating a captivating and distinctive flavor profile. While Mrs. Dung's bun rieu stand may not hold the title of the city's inaugural establishment or claim authenticity in comparison to its origins, it has persevered for decades. The intimate space nestled within an alleyway continues to draw loyal patrons, at times filling to capacity.

Through the passage of generations, from the era of Mrs. Dung to her son's stewardship, the essence remains unaltered. The broth, clear and vibrant, complements generous slices of beef, while freshly cracked duck eggs and the pièce de résistance – a sizable, velvety crab cake – stand as testaments to tradition. Situated before the gates of Yen Hoa High School, Mrs. Dung's bun rieu stand has become synonymous with student life. As the school day ends, the sight of uniforms flooding the eatery is a familiar one.
